FL Fuoriserie Vinsanto del Chianti Classico DOC 2006 375mL
The appellation of controlled origin.
The Vinsanto del Chianti Classico DOC FL Fuoriserie was born in 2006 20 km Northeast of Siena, in the southern part of the Chianti, towards Gaiole. The production methods are rigorously artisanal and mostly by hand.
To protect their living and working environment, the owners do not use chemicals that are harmful to the soil. Plants are cultivated in a way that respects their natural balance, using interventions that improve aeration, exposure to sunlight and controlling humidity, in a way that increases the plants’ defences against attack from disease or pests.
The Malvasia and Trebbiano grapes used for this Vinsanto are carefully selected by hand at the end of September 2006 and are then hung in well-ventilated rooms for drying.
After a few months of maturing, the result is a must that is rich in extracted sugar, which is then sealed in a traditional Tuscan Caratelli barrel for 12 years. Only after this long wait, the Vinsanto is ready for the delicate bottling operation.
The careful selection of the best grapes, the excellent craftsmanship, and the long stay of the wine in traditional Tuscan Caratelli ensure that a unique concentrate of density, color, aroma, and flavor is obtained, a true “Fuoriserie” nectar.

Production area: Monti in Chianti, Siena, Tuscany.
Grapes: Tuscan Malvasia and Tuscan Trebbiano.
Annual production: Around 2,000 bottles of 375 ml.
Harvest: End of September.
Vinification: When harvested, the grapes are initially hung for a few months in rooms with good ventilation for drying. In this way, after a few months, a must rich in extract and sugars is obtained and this gets sealed in small chestnut or oak barrels so that once the availability of oxygen inside the cask is exhausted, fermentation is forced to stop. Five years after the harvest, the Vinsantocan be taken for bottling. The yield, at the end of this long process, is generally less than 20 quintals of Vinsanto per hectare.
Colour: Limpid and transparent, intense amber, with excellent brightness and brown / mahogany reflections.
Scent: at first it shows strong intensity, the richness of aromas, and persistence. The sensations are strong, positive, and elegant. The enveloping aromas, reminiscent above all of the dried fruit, progress long and dominant. The tertiary notes are clearly perceived, the result of time and of the long journey, reminiscent hints of raisins, walnut husks, dates, and honey. Then, at a later stage, apricot, sweet spices, barley candy, and pipe tobacco complete, for now, a large and intriguing outfit.
Taste: it is powerful, full-bodied, and dense. It manages to express its character through an excellent balance, well-articulated between the sweet note of the wine, acidity and softness. The fruity note also returns to the taste, this time candied, reminiscent of citrus peel and dried figs, sweet spices and acacia honey. The palate remains clean and fresh, slightly almondy. Then, on the finish, to make everything very long and persistent, the aromas perceived on the nose return inexhaustible.
Matches with: dishes rich in structure and persistence. Ideal pairing with cheeses of great character, with important sensations, such as gorgonzola, blue and aged, even spicy. Also excellent with Foie gras and the typical Tuscan black Crostino, in addition to the classic combination that associates it with the many dry unleavened sweets of the Tuscan tradition. Not to be overlooked is pure meditation alone.
