DON GERMAN GRAN RESERVA VIÑA TAMM, 2017 Red Wine
Great body and fruit intensity, with a great balance between concentration, freshness, and structures. Elegant in flavors, with enveloping and long tannins, pleasant persistence.
The grapes come exclusively from the hill of our property, with a vertical back with a density of 5,000 plants per hectares. The soil is granite, of low fertility, ideal to produce vineyards of moderate validity, with limited and naturally balanced productions, the climate is dry and warm, but it presents a particularity due to its location close to chimbaronas mist, which dissipates in the midday, allowing a natural control of temperatures. The grapes are harvested manually in bins of 450 kilos. Traditional Bordalesa winemaking and each strain are fermented separately. The extractions are soft and long to obtain the maximum possible of the grapes, without falling into excess of tannins. Daily removals, stored in French oak barrels of 225 and 300 lt for 16 months, at the end of this aging period, the mixing is made, making a classification of barrel by barrel, the wine is not filtered and is naturally stabilized. At the end of this time, it is kept in a bottle for 6 months.
